Yesterday Eli came home from school and was dead set on having a lemonade stand. I was sooo not in the mood. Didn't even know if we had lemonade. I said, "Maybe." That didn't cut it for him, he was persistent so finally I said, "How 'bout sell muffins?" He was in. My sister had just given me a great muffin recipe (which she got from my other sister) and they are absolutely DELICIOUS! So, we made muffins and Eli made a sign. I'm not kidding, they sold like HOT CAKES!
Within 30 minutes we were out and Eli had made over $10. We even had moms walking down the street with dollars in hand because their child had given them a bite of their muffin. They are that good! But at that point we were sold out and closed.
Livin' the dream.
Soooo, I've decided as a gift to my 14 friends and family that check into my blog I'm going to give you this fantastic recipe. (Except my two sisters that gave me the actual recipe, how 'bout come on over for karaoke night and sundae bar this Sunday as my gift of love?)
WHOLE WHEAT MUFFINS
1/2 cup oil
1 egg
1/2 tsp salt
1 cup milk
1 cup brown sugar
1/2 tsp baking soda
1 tsp vanilla
2 cups whole wheat flour
Add everything but the flour and mix together then add the flour. Bake at 350 degrees for 15-20 min. (10 min. for mini muffins)
The last couple of times that I've made them I've doubled the recipe.
And on a side note: my MIL has not made mention of the blog. I'm guessing she doesn't look at it. She's coming this weekend. I'll let you know if she says anything, 'cause I know you're on the edge of your seat with this one.

Thank you for the recipe, Amy! I am a faithful reader of your blog. I also read the blogs of my three daughters-in-law and yes, I am on the edge of my seat, regarding your MIL. Give us news as it unfolds!

So I'm pretty sure I'm not one of the 14 you were counting, but I'm gonna steal this recipe too. :) Thanks!
